BRUSSEL SPROUT SALAD 
Cook brussel sprouts until tender. Drain. Add red onion rings.

1/2 c. vinegar
1/2 c. oil
1 tbsp. Italian seasoning
1 tbsp. sugar
Salt and pepper

Boil last 5 minutes 4 minutes. Pour over sprouts and onions. Let cool completely. Chill if preferred. Add tomato wedges and serve.
