LOW CALORIE JAM | |
1 c. fresh strawberries or other fruit, cut up or mashed 1/2 to 1 tsp. sugar substitute 1/2 tsp. lemon juice 1-2 tsp. unflavored gelatin 1/4 c. unsweetened apple juice In a small saucepan, over high heat, heat fruit, sweetener, and lemon juice to boiling. Boil 3-4 minutes, stirring frequently. Sprinkle gelatin evenly over juice, let stand 1 minute to soften gelatin slightly. Stir into fruit mixture until gelatin is completely dissolved. Refrigerate until jam thickens. Makes about 1 1/2 cups. |
