RUTH'S LOW CALORIE JELLO MOLD 
1 qt. sugar-free ginger ale
20 oz. can crushed pineapple
11 oz. can mandarin oranges
5 packets Knox gelatin
6 oz. can frozen orange juice
10 oz. pkg. frozen strawberries, defrosted or 1 pt. fresh

Drain and measure juice from pineapple and oranges. Add gelatin to 1 cup juice and set in pan of hot water until gelatin liquefies completely. Combine gelatin, ginger ale, orange juice, and 1/2 cup drained juice; mix thoroughly and add drained fruit and berries, also 3/4 cup frozen thawed or fresh blueberries, at least 1 banana sliced. Use large mold.

Note: Use fruit packed in unsweetened fruit juice.
