HUMMINGBIRD CAKE 
CAKE:

3 c. all-purpose flour
2 c. sugar
1 1/2 tsp. vanilla
1 1/2 c. Wesson oil
2 c. mashed bananas
3 eggs, beaten
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1 c. nuts, chopped
1 (8 oz.) can crushed pineapple with juice

CREAM CHEESE FROSTING:

1 (8 oz.) pkg. cream cheese, softened
1/4 lb. butter, softened
1 (16 oz.) box 10X sugar
1 tsp. vanilla

Do not use an electric mixer. Cake must be mixed by hand. Sift together flour, salt, soda and cinnamon. Add sugar and stir to mix. Add oil, vanilla and beaten eggs, mixing well. Add nuts, mashed bananas and pineapple, mixing until just blended. Pour into greased and floured 10" tube cake pan.

Bake 1 hour and 20 minutes in 350 degree oven. Cake will crack slightly on top. Cake may also be baked in 3 (9") layer pans for 25 to 30 minutes or until it tests done. Cool and frost with Cream Cheese Frosting.

FROSTING: Cream butter and cream cheese. Add sugar and vanilla. Mix well until smooth. Spread on cooled cake. NOTE: If making the layer cake, double the frosting ingredients.
