HUMMINGBIRD CAKE 
2 c. sugar
3 c. flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
3 eggs, beaten
1 1/2 tsp. vanilla
1 (8 oz.) can crushed pineapple, undrained
1 c. vegetable oil
2 c. mashed bananas
1 c. chopped pecans

Sift dry ingredients together. Add oil, eggs, vanilla, pineapple, bananas; mix well. Add nuts. Place in 3 (9-inch) cake pans. Bake 25 to 30 minutes at 350 degrees.

CREAM CHEESE FROSTING:

1 (8 oz.) pkg. cream cheese, softened
1/2 c. soft butter
1 lb. pkg. powdered sugar, sifted
1/2 c. chopped pecans
1 tsp. vanilla
