HOT MEXICAN TURKEY SALAD | |
2 c. fresh spinach, torn 1/2 c. sliced green onions 1/2 c. red pepper, finely chopped 12 cherry tomatoes, halved 1 c. canned corn, drained 1 tsp. Mexican seasoning 15 oz. boneless turkey, cubed 2 tbsp. vegetable oil 1/2 c. orange juice 2 tbsp. fresh lime juice Step 1: Combine spinach, onions, red pepper, tomatoes and corn in large bowl and set aside. Step 2: Combine turkey cubes and seasoning in a bowl. Toss to combine. Step 3: Heat oil in a large skillet over high heat. Add turkey cubes and saute until brown and cooked through. Stir in orange juice and lime. Spoon turkey mixture over vegetables and toss to combine. Step 4: Divide evenly. |
