2 gallons sliced peaches
7 c. sugar
1 c. vinegar

Wash peaches, but do not peel. Add sugar, vinegar cook on low heat until most of liquid has cooked out (2 hours or longer.) Put in jars and seal. They taste liked dried peaches.
