CARROT CAKE 
2 c. flour
2 c. sugar
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1 1/2 c. cooking oil
4 eggs
3 c. grated carrots

Put flour, sugar, salt, soda and cinnamon in bowl. Add oil, eggs and carrots. Pour into 2 cake pans oiled and floured. Bake at 350 degrees 30 to 40 minutes.

FROSTING:

8 oz. pkg. Philadelphia cream cheese
1 stick butter
1 lb. box powdered sugar
1 tsp. vanilla
1 can coconut
