BEEF ROULADEN 
Top round beef, selected to serving needs
1 lg. onion
Sharp mustard
Kosher dill pickles

Cut beef 1/8 inch. Lay slice of beef flat. Spread mustard liberally across slice. Sprinkle with onions. You may either chop pickle and sprinkle it across onion or you may roll the beef slice around a pickle spear. Bake covered with 1 inch of water for 1 1/2 hours at 350 degrees. Thicken juice with flour and heavy cream to use as sauce over rouladen. Add horseradish to either the mustard spread or to the sauce for a nice dish.
