VEGETABLE PIE 
2 c. packed grated raw potato
1 tsp. salt
3 eggs
3/4 c. chopped onion
1 crushed clove garlic
3 tbsp. butter
1 1/2 bunches broccoli florets
1 lb. sliced mushrooms
1/2 tsp. dried basil
Dash thyme
Dash of pepper
1 1/2 c. grated Cheddar cheese
1/2 c. milk

Combine potatoes, 1/2 teaspoon salt, 1 egg and 1/4 cup onion. Pat into oiled 9 inch pie pan. Bake at 400 degrees for 30 minutes. Then decrease temperature to 375 degrees, brush crust with some oil and bake 10 minutes more.

Saute 1/2 onion and garlic in butter 5 minutes. Add broccoli, mushrooms, 1/2 teaspoon salt, basil, thyme and pepper and cook 10 minutes. Spread 3/4 cup cheese over crust.

Top with sauteed vegetables and remaining cheese. Beat together remaining 2 eggs and milk and pour over vegetables.

Bake at 375 degrees for 35 to 40 minutes. Serves 6. Can substitute other favorite vegetables or 1/2 cup diced ham.
