FRESH VEGETABLE PIE | |
2 1/2 c. sliced zucchini 1 c. chopped fresh tomatoes, drained 1/2 c. chopped onions 1/4 c. freshly grated Parmesan cheese or 1 c. shredded Monterey Jack cheese 1/2 tsp. Italian seasoning 1 1/2 c. skim milk 3 eggs, beaten (or 2 eggs & 2 egg whites) 3/4 c. baking mix (such as Bisquick) Combine vegetables and cheese. Pour into lightly greased 9 x 13 inch glass baking dish. Beat milk and eggs together; add baking mix and beat until smooth. Pour over vegetables. Bake in 400 degree oven for 40 minutes or until golden brown. Cut in squares and serve immediately. Serves 6 to 8. |
