FRIED RICE | |
2 eggs 3 tbsp. peanut oil 1 clove garlic (1/8 tsp. minced) 1/4 lb. shrimp (sm. bag frozen precooked) 2 c. cold cooked rice (can use Minute Rice) 1 tbsp. light soy sauce Salt and pepper to taste 1 scallion Beat eggs. Run shrimp under cold water to defrost. Chop scallion real thin. Scramble eggs in 1 tablespoon peanut oil. Set aside. Put 2 tablespoons peanut oil in hot pan. Fry garlic until golden brown. Add shrimp and cook 1 minute. Add eggs and stir well. Add remaining ingredients and mix well until rice is heated. |

Saute celery, onions, move to the side and fry scramble an egg or two so that you see white and yellow. Chop it in the pan. You can put in water chestnuts, shrimp, chicken or what you like. Make your rice ahead and toss it in the pot. I fry in olive oil. I like to serve soy sauce on the side as not everyone wants it. I boil my rice with a chicken cube . Salt and pepper to taste.
