CANTALOUPE SOUP | |
1 cantaloupe, peeled, seeded and cut into chunks 1 c. sour cream or plain yogurt 1 1/2 c. orange juice 2 tbsp. honey 2 tbsp. lemon juice 1 1/2 c. dry white wine Put all but 2/3 cup of cantaloupe chunks into food processor or blender. Dice remaining cantaloupe and set aside. Add yogurt, orange juice, honey and lemon juice to processor. Process until cantaloupe is liquified. Add wine and mix. Divide diced cantaloupe among 4 bowls. Pour in soup. Chill. Serves 4. |
