POPOVERS 
1 c. regular flour
1 tsp. salt
1 tsp. sugar (optional)
1 c. milk
2 lg. eggs
1 tbsp. melted butter or oil

In a bowl, mix flour with salt and sugar. Add butter or oil, milk and eggs, and beat with hand beater or electric beater at medium high speed until very smooth about 2 1/2 minutes. Fill greased baking cups about half full with batter. Bake on center rack of oven until well browned and firm to touch in a hot oven, 400 degrees for about 40 minutes. Do not open door while baking. Makes 12 popovers in 1/3 cup size pans. 10 popovers in 1/2 cup size pans or 5 to 7 ounce oven proof glass cups.
