BAKED GARLIC CHICKEN 
1 tbsp. fresh rosemary, crushed
1/4 tsp. pepper
6 cloves garlic, minced
1 (3 lb.) fryer, cut up and skinned
1/2 c. pineapple juice
1/4 tsp. ground ginger
5 shallots, minced
Paprika

Rub rosemary, pepper and garlic into the chicken; arrange, meaty side up, in a 9-inch baking dish. Combine pineapple juice and ginger; pour over chicken. Sprinkle with shallots and paprika.

Cover and bake at 350°F for 30 minutes; remove and cover, and bake 25-30 minutes or until done.
