3 c. flour 1 c. firmly packed brown sugar 4 1/2 tsp. baking powder 1 tsp. salt 1 tsp. ground ginger 3 c. coarsely shredded unpeeled Bartlett pears 1 c. chopped walnuts 1 c. vegetable oil 4 eggs 2 tsp. grated lemon rind Heat oven to 350 degrees F. Grease and flour 2 loaf pans. In large bowl, combine flour, sugar, baking powder, salt and ginger. Add pears and nuts; toss to mix well. Set aside. In small bowl beat oil, eggs and lemon rind until blended. Stir into flour mixture just until moistened. Spread batter evenly in prepared pans, dividing equally. Bake loaves 55-60 minutes or until loaves pull away from sides. Cool for 10 minutes. Remove from pans to racks and cool completely. Wrap loaves in plastic wrap. Let stand overnight before slicing. |
