3 eggs 1 c. vegetable oil 2-3 pears, peeled & grated to make 2 c. 1 1/2 c. sugar 1/2 tsp. grated lemon rind 1 tsp. vanilla 2 c. all-purpose flour 1/4 tsp. baking powder 1/4 tsp. baking soda 1/2 tsp. cinnamon 2/3 c. chopped walnuts Preheat oven to 325 degrees. Beat eggs and slowly beat in oil. Add pears, sugar, lemon rind and vanilla. Sift dry ingredients and add to pear mixture, stirring just to moisten. Stir in walnuts and pour into 2 buttered and floured 8 inch loaf pans. Bake for 55 minutes. |
