CANDIED SWEET POTATOES 
8 med. sweet potatoes
1/3 c. brown sugar, packed
1/2 tsp. salt
1/4 c. butter
3/4 c. tiny marshmallows

Prepare and cook whole sweet potatoes in water just until tender. Drain, peel and cut into 1/2 inch thick slices. In a 1 1/2 quart casserole, layer half each of the potatoes, brown sugar, butter and salt. Repeat layers. Bake uncovered at 375 degrees for 30-40 minutes or until glazed. Sprinkle marshmallows over top. Bake about 5 minutes longer or until lightly browned. Serves 6.
