PINTO BEAN PIE 
4 eggs, slightly beaten
2 c. sugar
1 c. cooked, mashed pinto beans
1 stick butter, melted
2 tsp. vanilla extract
1 unbaked pie shell

Soak pinto beans overnight; rinse and cover with water. Cook beans until tender; mash.

Blend eggs, sugar, pinto beans, melted butter, and vanilla; mix well. Pour into an unbaked pie shell.

Bake at 325°F for 45 minutes.

Note: Your guest will think they are eating pecan pie.
