MOMMIE'S CORN AND SEAFOOD SOUP | |
1 lb. shrimp or crawfish (raw, peeled) 1 can creamed yellow corn 1 can whole kernel white corn 1 can cream of mushroom soup 1 sm. potato 4 oz. heavy cream 12 oz. whole milk 1 stick butter 2 stems celery 1 sm. bell pepper 1 med. white or yellow onion Garlic powder Cayenne pepper Salt Hot sauce (Tabasco) Parsley Chop celery, onion, and bell pepper fine. Saute seasonings in butter until soft and onions are clear. Add peeled, diced potato and raw seafood. Saute 5 minutes. Add remaining ingredients and seasonings to taste. Simmer on low- medium to medium heat, approximately 1/2 hour, stirring occasionally. Serve with Pizano's Parmesan Bread. Soup serves 4 to 6. |
