POPPY SEED MUFFINS 
2 c. flour
1/4 c. poppy seeds
1/4 tsp. salt, optional
1/4 tsp. baking soda
1/2 c. butter, soft
3/4 c. sugar
2 eggs
3/4 c. sour cream
1 1/2 tsp. vanilla

Preheat oven to 375 degrees. Grease muffin tins or use cupcake paper liners. Makes 16 muffins. With electric mixer, cream butter, sugar and eggs. Blend in sour cream and vanilla. Beat in all dry ingredients.

Spoon batter into muffin cups. Bake 15-20 minutes. Cool. (A streusel topping can be added before baking.)
