QUICK COFFEE CAKE 
1 1/2 c. sifted flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1 egg
2/3 c. milk
3 tbsp. melted shortening

Sift flour, sugar, baking powder and salt together. Beat egg; add milk and shortening. Stir liquids into dry ingredients, mixing only enough to dampen all the flour. Pour into greased pan. Sprinkle with crumb topping. Bake in hot oven (425 degrees) for 25 minutes. Makes one 9 x 9 inch coffee cake.
