PICKLED BEETS 
3 lbs. beets, sm.
1/2 tsp. BLAIR cinnamon
1 tsp. BLAIR allspice
1/2 c. sugar
6 whole cloves
1 pt. white vinegar
1/4 tsp. BLAIR ginger
1/2 c. water

Boil beets until tender. Remove skins. Heat vinegar in large saucepan, add spices, water, sugar. Boil, add beets and bring to a boil. Cook 5 minutes. Pack in sterilized jars and fill with hot spiced liquid. Seal.
