WELSH COOKIES 
4 c. flour
1 1/2 c. sugar
1 tsp. salt
1 tsp. nutmeg
3 tsp. baking powder
1 c. butter
1 c. currants (or raisins cut in half)
3 eggs
Milk
Oil

Mix and sift dry ingredients together. Cut in butter and mix. Add currants or raisins. Beat eggs with a fork in a 1 cup measure; add milk to make 1 cup. Add eggs and milk to other ingredients and mix. Roll out 1/4 inch thick on pastry cloth. Use flour, sparingly, as necessary. Cut into circles using cookie cutter. Heat oil on griddle. Bake (fry) slowly on griddle until light brown.
