MR. PILLSBURY'S BREAD
2 cakes yeast
1/2 c. lukewarm water
1/3 c. shortening
2 tbsp. salt
2 c. hot scalded milk
1 1/2 c. cold water
11-12 c. sifted flour

Soften yeast in lukewarm water (or substitute 2 packages dry yeast in very warm water). Combine sugar, shortening, salt and milk in large bowl. Cool with the cold water. Stir in yeast. Blend in flour to form stiff dough.

Knead on floured surface until smooth and satiny, 5-10 inches. Place in greased bowl, turning dough to grease all sides. Cover. Let rise in warm place until double in size, about 2 hours. Punch down well, place in bowl and cover. Let rise 30 minutes.

Divide into 4 parts on floured surface. Let stand 15 minutes. Shape into loaves. Place in greased 9x5x3 inch pans. Cover. Let rise until double in size, about 1 1/2 hours. Bake in moderate 375 degree oven for 45-50 minutes.
