SAUSAGE STUFFED SQUASH 
5 squash
1/2 lb. sausage
1/2 cup chopped onion
1 rib celery
1/2 cup seasoned stuffing mix (I use Pepperidge Farm)
3 tbsp. Parmesan cheese
1 (8 oz.) can tomato sauce
1/2 lb. grated cheese

Sauté sausage, onion and celery. Boil squash and scoop out pulp. Add to 1/2 cup stuffing mix and Parmesan cheese. Stuff shells.

In greased casserole dish, put the tomato sauce and then add squash.

Bake at 350°F for 35 minutes; after 25 minutes, add grated cheese on top of each squash.
