BURRITOS
MEAT FILLING:

1 lb. ground beef
1/2 c. chopped onion
1 c. (8 oz.) tomato sauce
1 tsp. chili powder
3/4 tsp. salt
1/2 tsp. garlic powder

Meat filling may be substituted with Ortega taco seasoning mix, made with 1 pound ground beef, according to directions.

Prepare meat filling: brown beef in skillet, stirring until crumbly. Drain fat. Stir in remaining ingredients. Simmer, covered, 10 minutes. Makes enough for 8 burritos or 10 taco shells. 1 can refried beans with green chilies 2 tbsp. chopped onion 10 oz. grated sharp Cheddar cheese Taco sauce 1 c. chopped lettuce 1 c. chopped tomatoes 1 pkg. lg. flour tortillas 8 oz. sour cream

While preparing meat filling, leave tortillas out to warm to room temperature.

Spread 2-3 tablespoons refried beans down center of each tortilla. Top with 1/2 teaspoon chopped onion (adjust to suit your taste). Top with 2-3 tablespoons meat filling, 3-4 tablespoons shredded Cheddar, taco sauce to taste. Fold over each side of tortilla and secure with toothpicks. Cover with more taco sauce, if desired, and Cheddar cheese to cover.

May be prepared in a casserole dish with desired number of burritos, and baked at 350 degrees for 20-30 minutes. Or may be microwaved individually until cheese melts, 1 minute on high, uncovered.

Serve topped with chopped lettuce, tomatoes, dollop of sour cream, and taco sauce to taste.

Since microwave ovens vary in power, you may need to adjust your cooking time.
