AL'S YUMMY PUMPKIN ROLL 
3 eggs
2/3 c. pumpkin
3/4 c. flour
1 tsp. ginger
1 tsp. baking soda
1/2 tsp. salt
2 tsp. cinnamon
1 tsp. lemon extract
1 c. sugar

Beat eggs 5 minutes; gradually add sugar. Add pumpkin, flour, spices and lemon. Pour into greased and floured cookie sheet. Spread to all corners and bake 15 minutes at 375 degrees. Turn out on a cloth, sprinkle with powdered sugar, roll up and chill. Unroll, spread with filling, roll up, chill and slice. This freezes well.

FILLING:

1 c. powdered sugar
1 (8 oz.) pkg. cream cheese
4 tbsp. butter, softened
1 tsp. vanilla

Mix together.
