EASY MASHED POTATOES 
3 lbs. potatoes, mashed
1/4 c. butter
2 eggs, beaten
1 tsp. salt
Pepper to taste
1/4 c. milk
1 (8 oz.) pkg. cream cheese
1/2 c. sour cream
1/4 c. finely chopped onion

Mix all ingredients well. Pour into a greased 2 or 3-quart casserole dish. Refrigerate overnight. Bake at 350 degrees for 45 minutes.
