GREEN BEANS WITH CASHEWS 
2 lb. fresh green beans
Boiling salted water
4 tbsp. butter
1 c. chopped onion
3/4 c. salted cashews
1/2 tsp. lemon juice
2 tbsp. parsley
Salt & pepper

Cut ends off beans. Cut into 2 inch pieces. Place in boiling water. Cook until tender but still crisp, 7-10 minutes. Drain, rinse with cold water. May refrigerate overnight.

Before serving, melt butter in large skillet. Saute onion. Add green beans and cashews. Cook until heated through. Stir in lemon juice and parsley. Salt and pepper to taste. Makes 8 servings.
