CARROT AND RAISIN CHEWS 
1 c. butter
1 c. brown sugar or 1/2 c. honey
2 eggs
1 tsp. vanilla
1 c. flour
1 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
1/4 tsp. nutmeg and cloves
2 1/2 c. quick oats, uncooked
2 c. shredded carrots
3/4 c. raisins
3/4 c. chopped nuts

Beat butter and sugar until light and fluffy. Blend in eggs and vanilla. Add combined flour, baking powder, cinnamon, salt, nutmeg, and cloves. Stir in oats, carrots, raisins, and nuts. Drop by teaspoons on greased sheet. Bake at 350 degrees for 12 to 15 minutes. Store loosely.
