CHICKEN A LA GRECQUE 
2 tomatoes, sliced
2 chicken breasts, boned & skinned
2 sm. garlic cloves, minced
2 tbsp. Parmesan
4 mushrooms, sliced
Juice of 1/2 lemon

Without separating, use 2 paper towels. Run towels under tap water to soak thoroughly. Wring out slightly. Spread towels out on a microwave-safe plate with perforation in the middle. Place tomato slices in the middle. Place chicken on tomatoes. Top with remaining ingredients. Fold towels completely to enclose chicken. Microwave on high 5-7 minutes. To serve, tear open towels and slide chicken and vegetables onto a plate.

Since microwave ovens vary in power, you may need to adjust your cooking time.
