PUMPKIN-COCONUT MUFFINS | |
2 eggs, slightly beaten 1 c. pumpkin 1 c. granulated sugar 1/2 c. cooking oil 1 1/2 c. flour 1 tsp. baking soda 1/2 tsp. salt 1/2 tsp. cinnamon 1/4 tsp. nutmeg 1 pkg. instant coconut pudding Preheat oven to 350 degrees. Combine eggs, sugar, pumpkin and oil. Mix well. Add all dry ingredients; mix well. For muffins: Fill muffin cups (well greased) 3/4 full. Bake 20 minutes. Makes 12. For bread: Pour into greased and floured 9x5x3 loaf pan. Bake about 60 minutes or until tester comes out clean. Makes 1 loaf. |
