PUMPKIN-APPLE STRUDEL MUFFINS 
2 1/2 c. flour
2 c. brown sugar
2 tsp. cinnamon
1/4 tsp. ginger
1/4 tsp. nutmeg
Dash of mace
1/2 tsp. salt
1 tsp. baking soda
2 eggs, slightly beaten
1 c. pumpkin (canned)
1/2 c. vegetable oil
2 c. peeled, finely chopped apple

Combine flour, brown sugar, spices, salt and soda in a large bowl. In a medium bowl, mix eggs, pumpkin and oil, then add these to the dry ingredients, mixing just until moistened. Stir in chopped apples. Spoon into greased muffin cups. Top with:

STREUSEL TOPPING:

1/4 c. sugar
2 tbsp. butter
2 tbsp. flour
1/2 tsp. cinnamon

Mix together until crumbly. Bake in 350 degree oven for about 20-25 minutes.
