COCONUT POUND CAKE 
3 sticks butter
3 c. sugar
6 eggs
3 c. plain flour
8 oz. sour cream
1/4 tsp. salt
1/4 tsp. baking soda
1 pkg. frozen coconut, thawed
1 tsp. vanilla

Have eggs, coconut and butter at room temperature. Cream butter and sugar. Add eggs one at a time, flour, salt, and soda, sour cream and vanilla. Beat well. Fold in coconut. Bake at 300 degrees until done.
