COOP'S CUPCAKE CHEESECAKES 
2 (8 oz.) pkgs. cream cheese
3/4 c. sugar
2 eggs
1 tsp. vanilla
Vanilla wafers
Pie filling (any flavor)
Cupcake holders (either 18 lg. or approx. 3 doz. sm.)

Beat cream cheese and sugar together. Add vanilla and eggs and blend.
