STRAWBERRY-RHUBARB SALAD 
4 c. diced rhubarb
1 1/2 c. water
1/2 c. sugar
1 (6 oz.) pkg. strawberry Jello
1 c. orange juice
1 tsp. grated orange rind
1 c. sliced strawberries

Combine rhubarb, water and sugar. Cook and stir over medium heat until rhubarb is tender. Remove from heat. Add Jello and stir until dissolved. Add juice and rind. Chill until starts to thicken. Add strawberries and pour in a Jello mold if desired. Garnish with whip cream.
