BASIC FRIED RICE 
2 eggs
1 c. chopped onion
1 c. fresh or cooked green peas
1 c. already cooked meat (beef or chicken works well)
5 tbsp. soy sauce

OPTIONAL EXTRAS:

1 to 2 green peppers
1 carrot

Scramble the eggs in about 1/3 cup oil, then set aside. Cut meat in small pieces and fry in small amount of oil. (Can add some soy sauce for flavor, or marinate for a few minutes before). Add all ingredients except soy sauce, mix and cook until tender, about 10 minutes. (If adding carrots and green pepper, cook them first a few minutes, then add the remaining ingredients.) Stir gently adding soy sauce. Cook 2 more minutes. Mix together with 4 to 6 cups of already cooked rice. Serve hot.
