LIGHT WHEAT MUFFINS | |
1 c. all-purpose flour 1 c. whole wheat flour 2 tbsp. sugar 2 1/2 tsp. baking powder 1/4 tsp. salt 1 egg, beaten 1 c. skim milk 1/4 c. vegetable oil Vegetable cooking spray Combine first 5 ingredients in a large bowl; make a well in center of mixture. Combine egg, milk and oil, stirring well; add to dry ingredients, stirring just until moistened. Coat muffin pans with cooking spray; spoon batter into pans, filling 1/2 full. Bake at 425 degrees for 20 to 25 minutes. Yield: 10 muffins, about 157 calories each. |
