OVEN ROASTED POTATOES 
5 lg. Idaho potatoes
1 tbsp. salt
1 tsp. pepper
2/3 c. corn oil
2 onions

Preheat oven to 450 degrees. Quarter or halve the potatoes (do not peel). Toss them with salt and pepper and corn oil. (Mix salt, pepper, and corn oil together in small bowl.) Spread potatoes on baking sheet and drizzle oil mixture. Bake for 20 minutes. Remove from oven and sprinkle onion over all potatoes. Return to oven for 25 minutes. Enjoy. Serves 5.
