CHEESY VEGETABLE CASSEROLE 
12 oz. American Velveeta cheese
1/2 c. butter
1 bag (16 oz.) frozen vegetable blend containing broccoli, cauliflower and carrots thawed and drained
1 c. (about 30) crushed butter crackers
2 tbsp. butter for crackers

Cut cheese into cubes. Place in a saucepan with 1/2 cup butter. Heat until melted and smooth, stirring often. Place vegetables in a 1 quart casserole dish. Pour cheese mixture over vegetable mix well. Melt 2 tablespoons butter. Stir in cracker crumbs. Sprinkle over top of casserole. Bake uncovered at 350 degrees for 20 to 25 minutes. Serve hot.
