CHOCOLATE PIE | |
1 c. sugar 1/4 c. cornstarch 1/4 tsp. salt 3 tbsp. butter 3 (3 oz.) sqs. unsweetened chocolate 3 eggs, beaten Grated rind of 1 lemon or orange 1 tsp. vanilla extract 1 (8 inch) baked crumb pie crust Whipped cream (optional) Combine 1 1/2 cups warm water, sugar, cornstarch and salt in 2-quart glass bowl. Add butter. Microwave on high for 5 minutes, stirring once. Stir in chocolate until melted. Beat in eggs, stirring chocolate mixture rapidly with wire whisk. Microwave on high for 1 to 2 minutes longer or until thickened and smooth, stirring twice. Stir in lemon rind and vanilla. Cool. Pour into cooled pie crust. Chill until firm. Serve with whipped cream. |
