CHOCOLATE PIE 
1 c. sugar
1/4 c. cornstarch
1/4 tsp. salt
3 tbsp. butter
3 (3 oz.) sqs. unsweetened chocolate
3 eggs, beaten
Grated rind of 1 lemon or orange
1 tsp. vanilla extract
1 (8 inch) baked crumb pie crust
Whipped cream (optional)

Combine 1 1/2 cups warm water, sugar, cornstarch and salt in 2-quart glass bowl. Add butter. Microwave on high for 5 minutes, stirring once. Stir in chocolate until melted. Beat in eggs, stirring chocolate mixture rapidly with wire whisk. Microwave on high for 1 to 2 minutes longer or until thickened and smooth, stirring twice. Stir in lemon rind and vanilla. Cool. Pour into cooled pie crust. Chill until firm. Serve with whipped cream.

Since microwave ovens vary in power, you may need to adjust your cooking time.
