CHICKEN HAWAIIAN 
2 whole chicken breasts, skinned, boned, halved & flattened with excess fat removed
4 canned pineapple rings (reserve juice)
4 slices ham
4 slices Monterey Jack cheese
Sprig of chopped parsley
1/2 c. flavored bread crumbs
1/2 c. butter

1. In a flat dish, press bread crumbs into chicken on both sides; reserve.

2. An oven proof casserole dish large enough to contain 2 chicken breasts.

ASSEMBLY:

1. Lay 2 chicken breast halves side by side in casserole dish. Top successively with slice of ham, chicken half, pineapple, Monterey Jack cheese, parsley and butter.

2. Add pineapple juice to casserole.

3. Bake in a preheated 425 degree oven for 25 minutes.

4. Remove from oven and serve on heated plates.

5. Spoon remaining juices around chicken.
