MONKEY CAKE 
1/3 c. milk
1/3 c. sugar
1/2 tsp. salt
1/2 c. shortening
1/2 c. warm water
2 pkgs. active dry yeast
2 eggs
2 c. butter
2 c. honey
2 c. brown sugar
1 c. cinnamon
3 c. raisins
3 c. chopped walnuts
7 c. sifted flour

1. Combine milk, sugar, salt and shortening in saucepan. Heat until bubbles appear around edges. Cool to lukewarm.

2. Mix warm water and yeast. Add to lukewarm milk mixture. Add eggs.

3. Beat in 4 cups of flour until mixture is smooth. Add enough remaining flour to make stiff.

4. Knead about 5 minutes. Let rise in warm place for about 1 1/2 hours.

5. Punch down dough, then let rise another 30 minutes.

6. Form pieces of dough into small balls and roll each in a bowl of cinnamon until completely covered.

7. Cover bottom of bundt pan with nuts, raisins, brown sugar and honey. Pour 1/3 of the melted butter over this mixture.

8. Completely cover with cinnamon balls. Add another layer of the raisins, nuts, honey and sugar. Pour 1/3 of butter. Repeat until 1 inch below top of pan.

9. Bake at 300 degrees 25-30 minutes.
