TURKEY SOUFFLE 
6 slices bread
2 c. diced turkey or chicken
1/2 c. chopped onion
1/2 c. chopped green pepper
1/2 c. chopped celery
1/2 c. mayonnaise
3/4 tsp. salt & pepper
2 beaten eggs
1 1/2 c. milk
1 c. mushroom soup
1/2 c. shredded sharp cheese

Crumble 2 slices bread into bottom of 8"x8" pan. Mix turkey, onion, green pepper, celery, mayonnaise, salt and pepper. Spread over crumbs in pan. Remove crusts from remaining 4 slices of bread. Place slices of bread on top of mixture in pan. Beat eggs and milk together. Pour over bread. Chill and leave overnight in refrigerator. Add soup to top. Bake 1 hour in 325 degree oven. Remove, add shredded cheese and bake 10 more minutes.
