CRISPY POTATO WEDGES 
1/4 c. olive oil
1/4 tsp. black pepper
1/2 tsp. thyme
1/4 tsp. paprika
1/4 to 1/2 c. grated Parmesan cheese
1/2 tsp. salt
1/2 tsp. dried basil
1/2 tsp. oregano leaves
4-6 med. potatoes

Combine oil and seasonings in a bowl. Cut unpeeled potatoes in half lengthwise and then into thirds. Coat each slice in seasoned oil. Crumple a piece of aluminum foil then straighten it out and put it on a baking sheet. Put a single layer of potatoes on aluminum foil. Bake at 450 degrees for 15 minutes. Sprinkle with cheese. Bake 15 minutes longer. Yield: 4 servings.
