CHEESY SOUR CREAM POTATOES 
8 to 10 med. potatoes
1 1/2 c. sour cream
2 c. grated cheese
1/3 c. finely chopped onions
1/4 c. butter
Salt and pepper (to taste)

Boil potatoes in skins until fork tender (not too soft to grate). Peel. Grate potatoes on large side of grater. Mix other ingredients with potatoes. Spread in buttered 8 inch square or 7 x 10 inch buttered casserole. Bake at 350 degrees for 30 minutes.

May not need all of the sour cream - don't let it get soupy.

May be frozen and baked when needed.
