CHICKEN CORDON BLEU 
1 tsp. butter, divided
1 (4 oz.) skinned & boned chicken breast, pounded to 1/8" thickness
1/2 oz. each sliced boiled ham & sliced thin Swiss cheese
2 1/4 tsp. plain dried bread crumbs

In a small skillet heat half of the butter over medium heat until bubbly and hot, add chicken and cook briefly on each side, just until no longer pink. Transfer chicken to plate and top with ham, cheese and starting from narrow end roll chicken to enclose filling. Secure with toothpick and put in shallow baking dish; set aside.

Preheat oven to 400 degrees. In same skillet, heat remaining butter over low heat until bubbly and hot, add crumbs and stir to combine. Sprinkle crumb mixture evenly over chicken roll and bake until cheese is melted, 2 to 3 minutes. Remove toothpick and serve.
