STUFFED ZUCCHINI 
3 med. sized zucchini
2 tbsp. chopped onion
2 tbsp. butter
1 c. Italian style bread crumbs
1/2 c. cooked tomato
1/2 tsp. salt, or to taste
1/4 tsp. pepper, or to taste

Cook zucchini in boiling water with 1 teaspoon salt for 10 minutes. Remove from water cut zucchini in half. Scoop out center pulp. Mix pulp with tomato in blender. Remove from blender and add remaining ingredients. Fill zucchini shells with the mixture. Sprinkle with parmesan cheese. Bake at 350 degrees for 15 minutes.
