MEAT LOAF TOPPED WITH
KETCHUP-AND-BACON
 
2 lb. lean ground beef
1/2 c. soft breadcrumbs
1/2 medium onion, finely chopped
2 large eggs, lightly beaten
2 tsp. salt
1 tsp. pepper
1 tsp. dried Italian seasoning
4 slices bacon
1/3 c. firmly packed brown sugar
1/2 c. ketchup
1/2 c. molasses

Stir together the ground beef, breadcrumbs, onion, eggs, salt, pepper and Italian seasoning. Shape into 2 (8-inch) loaves or 1 (10-inch) loaf and place in a lightly greased casserole dish.

Bake at 375°F for 20 minutes.

Stir together the brown sugar, ketchup and molasses. Arrange the bacon on top of the meat loaves and pour the sauce evenly over everything. Return to the oven and bake for another 50 minutes or until the meat is no longer pink in the center. Let stand 10 minutes before serving.
